Calzones

Similar to pizza a calzone is essentially like a pizza except the toppings are enclosed inside the dough. With this option you get a bite to the crisp dough on the top and bottom with every bite!

1 All Purpose Pizza Dough
½ Cup of Tomato Sauce
Chilli Flakes
1 ½ Sliced Peppers
1 Grilled Zucchini
½ Cup of Thinly Sliced Pepperoni
2 Cups of Shredded Mozzarella

Before you start with the dough ensure you have all of your fillings prepared and grease or flour your choice of baking surface either a pizza pan or stone. To start you will need one batch of all purpose pizza dough, cold from the fridge. Remove the dough from the bag and lightly flour. Cut the dough into 4 pieces and begin by shaping the first piece of dough into a circle.

Fill half the circle with your choice of toppings leaving a 1cm edge. Once you have filled your calzone flip the empty half onto the toppings and begin closing the calzone by twisting the edge over and over again creating a braid (see picture). Quickly place the finished calzone onto the prepared baking surface and continue with the other 3 pieces of dough. Spray each Calzone lightly with olive oil and sprinkle with kosher salt and sesame seeds. Bake for 20 minutes and enjoy!
